Q
Hi, Caitlin. Amber (aamber) said I should ask you for some good vegetarian recipes. My mother is having some people over for Christmas, and I really need to make the food that I can eat (my whole family is full of omnivores, which is fine, but they do not really care for me not eating meat). For Thanksgiving, my mother made a lot of stuff for me, but it was all out of a can (canned green beans, canned cream of mushroom soup). So I was wondering if you could give me some veggie casserole recipes?

Absolutely, I’d love to help! Not all of these are casseroles, but I hope they give you some good inspiration.
If you’re looking for something that can act as a creative vegetable side dish:
- Roasted Vegetables and Chickpeas
- Pomegranate Glazed Roasted Root Vegetables
- Zucchini, Black Beans, and Rice Skillet
- Roasted Cauliflower, Chickpeas, and Olives
- Eggplant, Zucchini, and Tomato Tian
- Butternut Squash Gratin with Blue Cheese and Sage
- Tomato Zucchini Casserole
- Sourdough Stuffing with Mushrooms, Apples, and Sage
- Artichoke Parmesan Sourdough Stuffing
And if you’re looking for something more substantial:
- Cauliflower and Parmesan Cake
- Mushroom Polenta Pie
- Broccolini and Potato Frittata
- Brie and Veggie Strata
- Vegetarian Egg Strata
- Squash and Swiss Chard Pasta Bake
- Roasted Butternut Baked Penne
- Autumn Mac and Cheese
- Winter Squash Wheat Berry Risotto
Frittatas and stratas are great, protein packed vegetarian casserole-type dishes. They’re so flexible and just about fail-proof. You can basically use any vegetable and cheese combo you want, just follow the cooking method of any standard recipe using your chosen vegetables.
I hope this helps! Have a beautiful and deliciously veggie-filled holiday.
